I have been keeping so very busy with putting food in the freezer and in jars for the winter. So far there are 26 chickens, several quarts of green beans, 15 quarts of corn and 14 quarts of apple sauce in the freezer. I also used 20 cups of apple pulp to make apple butter. I have no idea exactly how much butter I have until I can it. That will happen tomorrow or Saturday. I have canned about 20 quarts of dill spears, chips and sandwich slices. We have also dug over 50 lbs of red and Yukon gold potatoes. I still have 4.5 5 gallon buckets of apples to work up and onions to pull, chop and freeze. The green beans and pickles will be ongoing for a while and the tomatoes are just starting to ripen. We also have one more row of potatoes to dig. Now when you see that I have not blogged for several days, know that I am just dealing with the garden produce. We have been gifted with so much extra this year! The corn and apples are from our neighbors. I can’t help but share what they have given us. A lot of apple sauce went to other neighbors today. It sure felt good to do that! I will try to keep things fairly updated here but don’t hold your breath for daily postings. Just keep checking back! Things will slow down here eventually.
