We are nearly halfway done. One more day and we should be able to finish. We started butchering yesterday and those first 2 sentences are now my mantra. It was just Tom and I yesterday with some help from Jasmine and even littler help from Clint. We managed to get 3 of our extra roosters plus all 20 of the meat bird roosters butchered and in the freezer. I have no pictures from yesterday since we were so short handed. I had no one to play photographer for me!
We started with our extra roosters and, boy, are we glad we did! Have you ever heard the saying, “Tough old bird”? We know where it comes from! Even though they were only 1 and 2 years old, my sharp knives weren’t sharp enough. I was nearly in tears from not being able to even cut the skin. I dug out some tiny paring knives that were new and I finally was able to do my job. When we moved on to the meat birds, I realized it wasn’t that my knives were dull. Rather, it was that the birds were tough! By the end of the day, we were so glad that we started with those old birds.
It was a long day and we were all ready to fall into a sleep number bed by 6pm. And guess what? We get to do it all again next Saturday. We will be overrun with help for the second round and I am glad!
